If you're a fan of Gilmore Girls, it's a sign to recreate the delicious pumpkin pancakes with cinnamon butter from Luke's Diner! Nothing like this comforting breakfast during the fall while enjoying in a rewatch of the series!
Combine butter, powdered sugar, cinnamon, honey and salt until smooth and set aside.
Prepare the Pumpkin Pancakes:
In a large bowl, whisk together almond flour, oat flour, baking powder, baking soda, pumpkin pie spice and salt.
In another bowl, combine the egg, pumpkin puree, buttermilk, melted butter, coconut sugar and vanilla extract. Whisk until well blended.
Pour the wet ingredients into the dry ingredients. Stir gently until just combined.
Preheat a non-stick skillet over medium heat. Lightly grease with oil or butter. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side for about 2-3 minutes per side.
Serve warm with a dollop of cinnamon butter on top and add your favorite toppings like maple syrup, honey, or additional powdered sugar.

Storage:Leftover pancakes can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months. Reheat in the toaster or microwave.
