Ingredients
  

Pumpkin Pancakes

  • 3/4 cup almond flour 70 g
  • 1/3 cup oat flour 30 g
  • 1 teaspoon pumpkin pie spice
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 cup pumpkin puree 120 g
  • 3/4 cup buttermilk 180 ml
  • 2 tablespoons melted butter 28 ml
  • 1 tablespoon coconut sugar 12 g
  • 1 teaspoon vanilla extract 5 ml

Cinnamon Butter

  • 1/2 stick butter at room temperature
  • 1 tablespoons powdered sugar
  • 1 teaspoon cinnamon
  • 1 tablespoons honey
  • pinch of salt

Instructions
 

Prepare the Cinnamon Butter:

  • Combine butter, powdered sugar, cinnamon, honey and salt until smooth and set aside.

Prepare the Pumpkin Pancakes:

  • In a large bowl, whisk together almond flour, oat flour, baking powder, baking soda, pumpkin pie spice and salt.
  • In another bowl, combine the egg, pumpkin puree, buttermilk, melted butter, coconut sugar and vanilla extract. Whisk until well blended.
  • Pour the wet ingredients into the dry ingredients. Stir gently until just combined.
  • Preheat a non-stick skillet over medium heat. Lightly grease with oil or butter. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side for about 2-3 minutes per side.
  • Serve warm with a dollop of cinnamon butter on top and add your favorite toppings like maple syrup, honey, or additional powdered sugar.

Notes

Storage:
Leftover pancakes can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months. Reheat in the toaster or microwave.
