Start by peeling and cutting the peaches into small cubes. Then, in a ramekin or oven safe container combine the peaches, liquid sweetener, oat flour, lemon juice and vanilla extract.
In a separate bowl, mix together oat flour, almond flour, rolled oats, salt and cinnamon. Stir in liquid sweetener, coconut oil and vanilla extract until well combined.
Spread crisp topping on top of peach filling until mostly covered.
Bake for 15 minutes or until topping is golden brown. Let cool and a scoop of vanilla ice cream on top and enjoy!
