This Mini Healthy Chocolate Chip Banana Bread is made with clean ingredients. Perfect when craving your favorite dessert and wanting to bake a small recipe!
Peel - Peel and smash 1 banana. TIP:If you don't have a ripe banana, microwave it for 45 seconds. Peel should turn black.
Prepare – Gather and measure all ingredients by starting to mix the mashed banana, egg, coconut oil, vanilla extract and coconut sugar until well combined.
Add and Mix - Now, in a separate bowl add oat flour, almond flour, salt and baking soda, stir until well combined.
Add-in wet ingredients to dry ingredients. Fold with chocolate chips by using a wooden spoon or spatula. Don't over mix.
Transfer – Transfer batter into a baking mold, covered with parchment paper or greased with coconut oil. Consequently, add more chocolate chips on top.
Bake - Bake at 175C (350F) for 15 minutes or until a toothpick comes out clean when inserted in the center. Remove from the oven, allow to cool and gently remove from the pan. Cut in slices and enjoy!
Notes
Replace coconut sugar with brown sugar.
If allergic to coconut oil, replace with neutral oil.
Replace almond flour with coconut flour.
Don't overmix or overwork the batter. Remember, almond flour is ground almonds. If you overmix it, the natural oils start to come out, like when making almond butter. The trick is to mix it just enough until getting a smooth batter.
