Crust:
- 1 1/2 cup oat flour 150 g
- 1 teaspoon salt
- 5 tablespoons coconut oil 51 ml
- 1/3 cup cold water
- 2 tablespoon maple syrup
Blueberry mixture:
- 1 cup frozen blueberries
- 2 tablespoons maple syrup
- 1/2 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
- 1/2 tablespoon cornstarch
Prevent your screen from going dark
In a bowl, combine oat flour, salt, honey, water and coconut oil and knead dough.
Line up parchment paper on the work surface and roll dough into a 12-inch circle.
In a separate bowl, mix blueberries, lemon juice, vanilla extract, cornstarch and maple syrup.
Place blueberry mixture on the center of the dough leaving a 2-inch border. Lift and fold edges of the pie dough in towards the center.
Lightly brush edges with almond milk and sprinkle with coconut sugar.
Bake at 180C for 30-35 minutes.
- Replace coconut oil with neutral oil
- Replace maple syrup with any other liquid sweetener of choice like date syrup or agave syrup. If not vegan, use honey.
