Ingredients
  

Crust:

  • 1 1/2 cup oat flour 150 g
  • 1 teaspoon salt
  • 5 tablespoons coconut oil 51 ml
  • 1/3 cup cold water
  • 2 tablespoon maple syrup

Blueberry mixture:

  • 1 cup frozen blueberries
  • 2 tablespoons maple syrup
  • 1/2 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/2 tablespoon cornstarch

Instructions
 

  • In a bowl, combine oat flour, salt, honey, water and coconut oil and knead dough.
  • Line up parchment paper on the work surface and roll dough into a 12-inch circle.
  • In a separate bowl, mix blueberries, lemon juice, vanilla extract, cornstarch and maple syrup.
  • Place blueberry mixture on the center of the dough leaving a 2-inch border. Lift and fold edges of the pie dough in towards the center.
  • Lightly brush edges with almond milk and sprinkle with coconut sugar.
  • Bake at 180C for 30-35 minutes.

Notes

  • Replace coconut oil with neutral oil
  • Replace maple syrup with any other liquid sweetener of choice like date syrup or agave syrup. If not vegan, use honey.
