Easy Hot Cocoa Oatmeal Pancakes

Ingredients
  

Dry ingredients

  • 2 1/2 cups oat flour
  • 3 tablespoon unsweetened cacao powder
  • 2 teaspoon baking powder
  • 1/4 teaspoon salt

Wet ingredients

  • 1 1/2 cups almond milk
  • 3 tablespoon liquid sweetener of choice (see notes)
  • 2 egg

Toppings

  • Marshmallows
  • Chocolate chips

Chocolate Sauce

  • 1 1/2 tablespoon unsweetened cacao powder
  • 1 tablespoon liquid sweetener of choice
  • 2 tablespoon almond milk

Instructions
 

  • Once you have gathered all the ingredients, in a bowl start off by mixing the oat flour, unsweetened cacao powder, salt and baking powder. Therefore, in a separate bowl mix the egg, almond milk, liquid sweetener of choice. After that, stir everything together.
  • Turn on stove top on low heat and consequently in a non-stick pan spray some oil or add 1 tbsp of coconut oil. Consequently add a big spoonful of your batter and flat until making a circle shape. Wait until slightly seeing some bubbles and that’s the sign to flip your pancake. Cook for 2-3 minutes more on the other side and take it out from the pan. Do the same until the batter is finished.
  • Add chocolate chips, marshmallows and chocolate sauce. Enjoy!

Notes

  • Don’t have oat flour? Simply blend rolled or quick oats in a food processor.
  • Gluten-free? Use a certified gluten-free oats.
  • Liquid Sweeteners options: maple, date, agave syrup or honey
