Melting the Chocolate: In a microwave-safe bowl, add dark chocolate chips and coconut oil.
Microwave in 30-second intervals, stirring in between, until the chocolate is fully melted and the mixture is smooth.
Prepare mix: In a large bowl, add Amaranth puffs, honey, melted dark chocolate and peanut butter. Mix well until everything is evenly coated.
Line an 8x8-inch baking dish with parchment paper, leaving some overhang on the sides for easy removal.
Pour the mixture into the prepared dish and spread it out evenly, pressing it down firmly with a spatula or your hands.
Refrigerate for at least 1 hour, or until the mixture is firm and set.
Once set, lift the mixture out of the dish using the parchment paper overhang. Cut into bars or squares using a sharp knife and enjoy!
Storage:
Store the bars in an airtight container in the refrigerator for up to 2 weeks.
