Ingredients
  

  • 3 cups Amaranth Puffs (90 g)
  • 1 cup melted dark chocolate chips (175 g)
  • 2 tablespoons coconut oil (30 ml)
  • 1/4 cup honey (160 g)
  • 1/4 cup peanut butter (240 g)

Instructions
 

Melting the Chocolate:

  • In a microwave-safe bowl, add dark chocolate chips and coconut oil.
  • Microwave in 30-second intervals, stirring in between, until the chocolate is fully melted and the mixture is smooth.

Prepare mix:

  • In a large bowl, add Amaranth puffs, honey, melted dark chocolate and peanut butter. Mix well until everything is evenly coated.
  • Line an 8x8-inch baking dish with parchment paper, leaving some overhang on the sides for easy removal.
  • Pour the mixture into the prepared dish and spread it out evenly, pressing it down firmly with a spatula or your hands.
  • Refrigerate for at least 1 hour, or until the mixture is firm and set.
  • Once set, lift the mixture out of the dish using the parchment paper overhang. Cut into bars or squares using a sharp knife and enjoy!

Notes

Storage:
Store the bars in an airtight container in the refrigerator for up to 2 weeks.
