This Cookie Cereals Recipe will bring you back to childhood. Made with oats, these chocolate chip cereals are a healthy alternative to the ones you buy. So quick and easy that you'll now make cookie crisps at home.

Ingredients
  

  • 1/3 cup coconut sugar (60 g)
  • 1/4 cup oil (30 ml)
  • 1 egg
  • 1 cup oat flour
  • 1/2 cup almond flour (50 g)
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt

Instructions
 

  • Pre-heat oven at 175°C (350°F) and line a baking sheet with parchment paper.
  • In a bowl, combine almond flour, oat flour, baking soda, baking powder and salt.
  • In a separate bowl, whisk together coconut sugar, oil and egg.
  • Mix everything together with a wooden spoon or spatula until well combined.
  • Scoop the dough with a measuring spoon onto a parchment paper-lined baking sheet, shaping the it into small balls. Add chocolate chips and with your fingers, gently flatten each cookie.
  • Bake for 10-12 minutes. Let cool and enjoy your cookie cereal bowl with a good splash of milk!
