Ingredients
  

Dry ingredients

  • 1 cup oat flour 100 g
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet ingredients

  • 1 egg
  • 3 tablespoon coconut oil 17 ml
  • 2 tablespoon honey 20 ml
  • 1/2 cup yogurt 60 g
  • 1/2 teaspoon vanilla extract

Toppings

  • 100 grams of 70% dark chocolate

Instructions
 

  • Preheat the oven to 180°C (350°F).
  • In a bowl, mix oat flour, baking soda, and salt.
  • In another bowl, whisk together the egg, coconut oil, honey, yogurt, and vanilla extract until well combined.
  • Gradually add the dry ingredients into the wet mixture, stirring until a smooth batter forms.
  • Transfer the batter into a ziploc bag and seal it. Snip off a corner of the bag to create a makeshift piping bag.
  • Pipe the batter into a greased donut pan, filling each cavity about 3/4 full.
  • Bake for 10 minutes or until the donuts are golden brown and cooked through.

For the chocolate topping:

  • While the donuts are baking, prepare the chocolate coating. Place 70% dark chocolate in a microwave-safe bowl.
  • Microwave the chocolate in 30-second intervals, stirring in between, until fully melted and smooth.

Finishing the donuts:

  • Allow the baked donuts to cool completely at room temperature.
  • Once cooled, carefully dip each donut into the melted chocolate, ensuring they are fully coated on top.
  • Place the chocolate-coated donuts back on the wire rack to allow any excess chocolate to drip off.
  • Refrigerate the donuts for about 10-15 minutes or until the chocolate coating sets.
  • After chilling, the donuts are ready to be enjoyed!

Storage
Room Temperature: Store the donuts in an airtight container at room temperature for up to 2 days.
Refrigerator: For longer freshness, refrigerate the donuts in an airtight container for up to 5 days.
Freezer: These donuts can be frozen for future enjoyment. Place them in a freezer-safe container or bag, separating layers with parchment paper to prevent sticking. Freeze for up to 1 month. Thaw in the refrigerator or at room temperature before serving.
