For the chocolate crunch topping, start by microwaving dark chocolate with an olive oil in a microwave-safe bowl. Microwave in 15-second intervals, stirring between each interval, until the chocolate is melted and smooth. This usually takes about 30-45 seconds in total, depending on your microwave's power.
Once the chocolate is melted, mix in amaranth puffs until they are evenly coated with the chocolate.
Pour the chocolate crunch mixture on top of the prepared oatmeal batter. Spread it evenly to cover the surface.
