Ingredients
  

Cake base:

  • 2 cup + 1/4 cup oat flour 220 g
  • 1/2 cup unsweetened cocoa powder 50 g
  • 1 teaspoon baking soda 2 g
  • 2 teaspoon baking powder 4 g
  • 4 eggs
  • 1 cup milk 240 ml
  • 1/3 cup coconut sugar 60 g
  • 1/2 cup coconut oil 120 g

Cake Balls:

  • 1/2 cup chocolate spread

Toppings (get creative!):

  • crushed cookies
  • nuts
  • caramel bits
  • matcha powder
  • crushed Oreo cookies

Instructions
 

  • Prepare the Cake Base: Start by mixing all the dry ingredients until well mixed. In another bowl, whisk wet ingredients very well. Combine dry and wet ingredients together. Pour the batter into a greased baking pan. Bake the cake at 350°F (175°C) for about 25-35 minutes, or until a toothpick inserted into the center comes out clean. Once baked, allow the cake to cool completely in the pan on a wire rack.
  • Crumble the Cooled Cake: Once the cake has cooled thoroughly, remove it from the pan and place it in a large mixing bowl. Use your hands, or a fork, to break the cake into fine crumbs.
  • Mix with Chocolate Spread: Gradually add chocolate spread to the cake crumbs. Mix the crumbs and spread together until the mixture reaches a dough-like consistency that holds together when pressed. Adjust the amount of chocolate spread as needed to achieve the right texture.
  • Roll into Balls: Scoop out small portions of the mixture and roll them between your palms to form 1-inch balls. As you roll each ball, place it on a baking tray lined with parchment paper, ensuring they are spaced apart.
  • Coat with Melted Chocolate: Melt your choice of chocolate (dark, milk or white) using a microwave. Dip each cake ball into the melted chocolate, ensuring they are fully coated. Allow any excess chocolate to drip off before placing the balls back on the parchment-lined tray.
    Note: Instead of the chocolate you can also use nut butter.
  • Add Cookie Crumbles on Top: While the chocolate is still wet, sprinkle cookie crumbles or other desired toppings over each ball. Gently press the toppings into the chocolate to ensure they adhere.
  • Chill on a Parchment-Lined Tray: Place the tray in the refrigerator and allow the cake balls to chill for at least 30 minutes, or until the chocolate coating is fully set and firm to the touch.

Notes

Storage:
Once the cake balls are fully chilled and set, transfer them to an airtight container. Store the container in the refrigerator, where the cake balls will keep fresh for up to a week.
Additional toppings:
Oreo cookies, seeds, nuts, dried fruits or sprinkles.
