Ultimate 1-MINUTE Hot Chocolate Cookie (Single-serving) it's a vegan, gluten-free and sugar-free soft cookie! You won't believe that is healthy. It's made on the microwave and only 8 ingredients are needed!
Prepare - Gather and measure all the ingredients by starting to mix the oat flour, unsweetened cacao powder and baking powder. Add-in almond butter, mashed banana and milk of choice.
Knead - Add chocolate chips, vegan marshmallows and knead the dough with your hands.
Microwave - Microwave for 1 minute. Check if the cookie have risen a bit and looks drier in the outside. The cookie must be hot, so it will still cook inside. Let it cool completely before eating. (see notes)
Notes
No oat flour? Blend old fashioned, quick or rolled oats
Gluten-free? Make sure to use a certified oats!
Don't like bananas? Replace with applesauce.
While kneading the dough, it should not be sticky. If that happens, add more oat flour.
If the cookie still looks too raw, microwave for another 15 seconds. We want a soft cookie, not dry!
