YES, you heard right! This White Chocolate & Peanut Butter Baked Oats is a total wonder! The texture of the center is like cake batter, but absolutely delicious!
The peanut butter gave a nice balance between the white chocolate with the right amount of sweetness. Plus, it’s high in protein and fiber, so you’ll stay full for hours.
This baked oats gives you warm and hearty feelings. Tastes literally like dessert for breakfast!
I feel like the Peanut Butter and White Chocolate combo is so underrated! They go so well together! And of course with an oats recipe couldn’t be better.
In this recipe, I tried to use mostly clean ingredients! So I could say is balanced and healthy and way better than store-bought. It’s super easy and quick to make, no need to put much effort into it.
Ingredients to make White Chocolate & Peanut Butter Baked Oats
The list:
- Oat flour – which is blended rolled oats. If gluten-free, then make sure to use a certified one!
- Granulated sweetener of choice – I personally use erythritol (a sugar substitute) but you can use any.
- Unsweetened cacao powder – You can also use dark cocoa powder.
- Vanilla protein powder – For a protein boost and special vanilla flavor! It also gives an amazing texture.
- Baking powder
- Milk of choice – I used unsweetened almond milk but you can use any other kind of plant-based or dairy milk.
- Greek yogurt – I use 0% greek yogurt but if vegan feel free to use any plant-based yogurt alternative.
- Honey – For the extra hint of sweetness. You can also use maple or date syrup.
- Sugar-free white chocolate – Feel free to use any white chocolate brand!
How to make White Chocolate & Peanut Butter Baked Oats?
The Instructions
- Prepare – Gather and measure all ingredients by starting to mix the oat flour, vanilla protein powder and baking powder. Therefore, add-in yogurt, honey or maple syrup milk of choice and stir until well combined.
- Transfer – Transfer oatmeal batter into an oven-safe container or ramekin, leaving 1/8 of it.
- Prepare Peanut Butter filling – Add 1 tbsp of peanut butter, 1 tbsp water and mix until getting an almost liquid consistency.
- Cover – Cover with remaining batter.
- Add – Add white chocolate on top of the batter.
- Bake – Bake at 180C for 18 minutes!
Can I prep batter the night before?
The answer is: YES! Make sure to mix all the dry ingredients together in a bowl and the wet ones in another. Then, the next morning mix both together and bake.
Note: I don’t recommend mix everything up in one bowl the night before, as the baking powder can lose effect and therefore the baked oats won’t rise.
How big is this recipe?
I used a 6 oz ramekin. So this baked oats are single serve. Just for YOU.
Want to save for later?
You can store it in the fridge up to 3 days. And when you are ready to eat the rest, microwave it for 45 seconds. Add a splash of milk to moisten it and it’s ready to DEVOUR.
How to prepare the peanut butter filling?
If your peanut butter is thick, you should add 1 tablespoon of water. Until getting a creamy almost watery consistency as shown in the second picture.
Ingredients substitutes and notes
- No oat flour? Use rolled oats and add all the ingredients into a blender.
- No protein powder? Replace with coconut flour! But protein powder is a MUST!
If vegan:
- Replace greek yogurt and milk for any plant-based alternative.
