The magic of a Red Dragon Fruit!
This fruit is refreshing, contains a lot of water, and has an intense beet-like color, the taste is slightly sweet and has a texture between an apple and a kiwi.
Ingredients to make Pink Oatmeal with Chocolate Ganache
- Rolled oats – Oats are among the healthiest grains on earth. You can use quick oats as well.
- Any granulated sugar – I use erythritol to keep the cookie’s base completely sugar-free. But you can use any sugar available in your pantry.
- Flaxseed – Another powerful food. High in Omega-3, fiber and you won’t taste anything of it. Great for an egg replacement.
- Unsweetened cacao powder – Healthy, bitter and great aroma. Any benefits aside from its deliciousness? It’s rich of antioxidants which great for your health. Cacao gave the Chocolate Ganache an amazing chocolatey flavor that made them irresistible.
- Milk of choice – I use unsweetened almond milk. But you can use any plant-based or dairy milk.
- Lotus Biscoff cookies – They gave the perfect crunch for this oatmeal bowl and also the hint of sweetness that this dark Chocolate Ganache needed.
- Red Dragon Fruit – The star of the movie to give this sexy color and nutrients.
How to make this Pink Oatmeal?
- Prepare – Gather and measure all the ingredients, starting with mixing the rolled oats, granulated sugar of choice, flaxseed and unsweetened cacao powder in a bowl. Consequently add in, the milk of choice and stir until well combined.
- Heat – Microwave your raw oatmeal batter for 1 minute. Once it has finished, stir well. Therefore, repeat the process for an additional minute. Be careful, the bowl will be very hot and oatmeal should be thickened
- Toppings – Add Chocolate Ganache on top along with the crushed Lotus Biscoff cookies.
- Refrigerate – Refrigerate overnight or for 4 hours. I that way the Chocolate Ganache it’s going to thicken.
How to make Chocolate Ganache?
This Chocolate Ganache has only 3 ingredients! First, you will need to sift the unsweetened cacao powder to avoid clumps! Therefore, mix any granulated sugar available in your pantry to give the hint of sweetness. For the latter add warm water and stir well.
The consistency of the Chocolate Ganache should look like a melted chocolate bar.
How to crush Biscoff cookies?
There are 3 methods:
Method 1 (my choice):
- Grab a Biscoff cookie.
- With your fingers break piece by piece leaving large chunks.
- Repeat process until desire amount of cookies.
Method 2:
- Grab a Biscoff cookie.
- Place many cookies as you want, in a zip lock bag and start smashing with a rolling pin or meat mallet.
- Don’t forget to leave large chunks!
Method 3:
- Grab a a Biscoff cookie.
- Add everything in a food processor or blender by pulsing for only a quick second around 3 times.
- Remember to leave the large chunks.
Notes
- Don’t have Biscoff cookies? I HIGHLY RECOMMEND IT! But no worries, feel free to omit them.
