    This Mini Chocolate Strawberry Cobbler is a small or single-serving recipe. Made with clean ingredients. Easy to make, gluten-free and delicious!

    If you always feel like craving something sweet after lunch, dinner or a savory meal… Then you really need to try this healthy dessert!

    This a Mini Chocolate Strawberry Cobbler for beginners

    First of all, I love to make small recipes! In case, they don’t turn out as expected you can always make small fixes in the next attempts. This is honestly the quickest and easiest recipe you can bake. With minimal, simple ingredients and no resting time. You’ll be amazed at how quick this delicious mini cobbler dessert can be made.

    What you’ll need

    The list:

    • Oat flour – I usually buy it, but you can make your own by blending quick oats into fine powder. Blend extra oat flour and save it in an airtight container for other baking or cooking recipes
    • Almond flour – Make sure to use superfine blanched almond flour. It gives extra moisture and shelf life to baked goods. Don’t use almond meal or ground almonds, the difference is that the flavor and texture will change.
    • Walnuts – Feel free to use any nuts of choice. The nuts give a special crunch and flavor to the crust. If allergic, feel free to omit it.
    • Vanilla extract
    • Salt
    • Coconut oil – I used unrefined coconut oil. But feel free to use any kind of oil.
    • Liquid sweetener – Any liquid sweetener works: agave syrup, date syrup, maple syrup. If not vegan, then use honey.
    • Strawberries – I used frozen strawberries because they were the only ones I had at the moment. Feel free to use fresh strawberries as well.
    • Lemon juice – For that tangy flavor in the blueberry mixture. It’s highly recommended to add it.
    • Cornstarch – Used to thicken up the strawberry mixture.
    • Chocolate chips
    • Greek yogurt

    How to make a Healthier Chocolate Strawberry Cobbler

    You’ll be amazed at how easy this cobbler recipe can be made. No need for baking experience to make this because it’s too easy!

    The Instructions

    • Prepare oven: Pre-heat oven at 180C (350F).
    • Filling: In a ramekin or over-proof bowl, combine all the ingredients for the strawberry filling and let sit.
    • Prepare the crust: In a food processor, add walnuts and blend for 2-3 times until finely chopped. Then, in a separate bowl mix together all the crust ingredients.
    • Assemble: Therefore, add crust mixture on top of filling until well covered.
    • Cook: Bake for 25 minutes or until crust is golden. Remove from the oven and let cool. Add some vanilla ice cream or any yogurt on top. Enjoy!

    What to serve with this Mini Chocolate Strawberry Cobbler

    You need to know that you don’t have to add anything else to this cobbler. It’s simple and delicious by itself. But in case, you’re feeling a littler bit ✨EXTRA✨ here are some ideas:

    • Greek yogurt (for extra protein)
    • Whipped cream (vegan or dairy)
    • Vanilla ice cream

    Those are my top 3 toppings, but feel free to add any other toppings of choice.

    You can store it in the same ramekin covered with a plastic wrap and place it directly in the refrigerator for up to a week.

    How to eat after refrigerating?

    You can consume directly but you can also microwave it for 15-25 seconds. In this way, you will get a fresh-baked consistency.

    Can I use fresh strawberries?

    Of course, fresh strawberries are way more flavorful and sweet.

    I’m allergic to coconut oil! Will this work with any other type of oil?

    Absolutely! You can use neutral oil or melted butter.

    • If not having almond flour, feel free to use 1:1 flour or coconut flour.
    • Replace coconut oil with neutral oil.
    • Feel free to use any other liquid sweetener of choice, like: honey, date syrup or agave syrup.
    • No oat flour? Blend quick oats until ground.
    • No walnuts? use any other type of nuts: pecans or almonds.

    Filling:

    • 1 cup strawberries
    • 1/2 tablespoon lemon juice
    • 2 tablespoon maple syrup
    • 1 teaspoon cornstarch
    • 1/4 cup chocolate chips

    Crust:

    • 1/4 cup oat flour 25 g
    • 1/4 cup finely chopped walnuts 25 g
    • 1/4 cup almond flour 25 g
    • 1/8 teaspoon salt
    • 2 tablespoon maple syrup 25 ml
    • 2 tablespoon coconut oil 20 ml
    • 1/4 teaspoon vanilla extract

    Extra:

    • 1 tablespoon greek yogurt
