In this recipe, I used ingredients! So I could say is balanced, healthy and way better than store-bought. It’s super easy and quick to make, no need to put much effort into it.

What ingredients do you need to make this Microwave Apple Mugcake?

    The list:

    • Oat flour – which is blended rolled or quick oats. If gluten-free, then make sure to use a certified one!
    • Cinnamon – The special spice for the “cinnamoney” flavor.
    • Baking powder
    • Milk of choice – I used unsweetened almond milk but you can use any other kind of plant-based or dairy milk. The type of milk won’t affect the flavor of the recipe.
    • Applesauce – It gives more apple flavor and it’s the replacement of eggs! I used unsweetened applesauce because later on we will be adding additional sweetener.
    • Vanilla extract – For that special essence!
    • Honey – For the extra hint of natural sweetness. If vegan, you can also use maple or date syrup.
    • Apple – MAIN character of the movie. Make sure to pick some red fresh apples. Any type must work.
    • Coconut sugar – You will be adding them for the topping! The secret for a crunchy crust is adding coconut sugar! Which is the replacement of brown sugar.

How to make Microwave Apple Mugcake?

    The Instructions

    • Prepare – Gather and measure all ingredients by starting to mix oat flour, baking powder and cinnamon in a bowl. Therefore, add-in applesauce, vanilla extract, honey or maple syrup, milk of choice and stir until well combined. Leave this aside and consequetly start making the apple filling.

    • Apple Filling – First, you’ll need to peel and dice a small red apple (any type) in a bowl. Therefore, add-in cinnamon, liquid sweetener of choice (could be honey or maple syrup) and microwave for 1 minute. I usually don’t like peeling the apple but it’s the only way you could get a softer apple texture as “filling”.

    • Assemble – Start by assembling your mugcake by adding the first layer of apple filling, then add a batter’s layer. Repeat process for both layers until leaving the batter’r layer.
    • Topping – Once you have layered the mugcake, make sure to leave the batter layer on top so you could add the cococut sugar mixed with cinnamon. Adding this topping will make a crunchy crust!
    • Microwave – Microwave fo 1 minute and 30 seconds. Make sure to use a big mug of bowl as this mugcake will tend to rise up or explode!
