This is honestly the easiest baking recipe in case you’re a bit afraid or find like kneading and rolling a dough is complicated. But I promise, is not! With minimal, simple ingredients and no resting time. You’ll be amazed at how quick this delicious pie can be made.
What you’ll need
The list:
- Oat flour – I usually buy it, but you can make your own by blending quick oats into fine powder. Blend extra oat flour and save it in an airtight container for other baking or cooking recipes
- Salt
- Coconut oil – I used unrefined coconut oil. But feel free to use any kind of oil.
- Water
- Liquid sweetener – Any liquid sweetener works: agave syrup, date syrup, maple syrup. If not vegan, then use honey.
- Blueberries – I used frozen blueberries because they were the only ones I had at the moment. Feel free to use fresh blueberries as well.
- Vanilla extract
- Lemon juice – For that tangy flavor in the blueberry mixture. It’s highly recommended to add it.
- Cornstarch – Used to thicken up the blueberry mixture.
How to make a Healthier Blueberry Oat Galette

The Instructions
- Mix crust ingredients: In a bowl, combine oat flour, salt, honey, water and coconut oil and knead dough.
- Prepare the dough: Line up parchment paper on the work surface and roll the dough into a 12-inch circle.
- Combine blueberry mixture: In a separate bowl, mix blueberries, lemon juice, vanilla extract, cornstarch and maple syrup.
- Assemble: Place blueberry mixture on the center of the dough leaving a 2-inch border. Lift and fold edges of the pie dough in towards the center.
- Lightly brush edges with almond milk and sprinkle with coconut sugar.
- Cook: Bake at 180C for 30-35 minutes.

You need to know that you don’t have to add anything else to this galette. It’s simple and delicious by itself. But in case, you’re feeling a littler bit ✨EXTRA✨ here are some ideas:
