What are overnight oats?
Overnight oats…Well, I would rather call them a “time saver super-food“. As they are so quick and simple, they are the perfect healthy breakfast for busy days. Add all the ingredients into a container or mason jar, refrigerate overnight (so the oats can soak) and the next day your breakfast is ready to enjoy! Although most people eat them chilled, the oats can also be served warm. Cook on the stove or microwave for 45 – 60 seconds and you’ll get a cozy bowl of oatmeal. With Biscoff, if you make this recipe!
I discovered Overnight Oats when I was in my Sophomore year of Uni while studying Civil Engineering! My classes used to start at 7:00 A.M. so I needed to make a “Grab & Go” breakfast. I needed something filling so I wouldn’t get hungry in a few hours, especially when I had a test or exam!
Microwave oatmeal was my fastest breakfast but it was still taking me time. So I decided to make it overnight! Since then, it has been my all time go-to breakfast.
The ingredients for Lotus oatmeal
This recipe is indeed very simple. However, for the best result I recommend reading through the following lines. Here you will learn all you need to make Biscoff overnight oats at home!
- Oats – I used rolled oats. They have a chewier texture and soak well without getting a mushy consistency. As a replacement you can also use quick oats, but make sure to slightly decrease the amount of milk. On the contrary, steel cut oats will not work because they require cooking.
- Vanilla Protein Powder – optional, but highly recommended for a protein BOOST. This recipe uses vegan protein powder, vanilla flavor to be precise. Also whey protein works, but in this case you’ll need a couple tablespoons of milk less.
- Milk – I used unsweetened almond milk but you can use any other kind of plant-based or dairy milk.
- Yogurt – for extra creamy oats, I recommend using either plain or Greek yogurt. Also dairy-free, if it is necessary.
- Lotus Biscoff Spread – you can get this at any grocery shop or on Amazon.
- Lotus Biscoff Biscuit – as for the spread, I buy the biscuits at the local supermarket.
That’s it. Minimal, simple and delicious ingredients only!

How to reheat oatmeal in the morning?
If you don’t feel like eating a cold meal in the morning – especially in Winter – there are two ways to warm up overnight oats:
- Microwave: Grab your breakfast from the fridge and microwave for 45-60 seconds (make sure there’s enough space at the top of your jar to prevent overflowing).
- Stove-top: Transfer to a saucepan and heat over medium heat until they are warm.
Notes and substitutions
- Feel free to omit the vanilla protein powder (although I highly recommend using it) and replace with an additional 1/2 tablespoon liquid sweetener of your choice (such as maple syrup, agave syrup, date syrup or honey).
- If vegan, replace milk and yogurt with plant-based alternatives. The consistency and flavor will still be amazing!
- Make sure you refrigerating the oats overnight or for at least 4 hours so that they can soak.

Very nice recipe. Good way to make overnight oats interesting other than fruit.
Does say gluten free. Have to question this as it is biscoff which is a wheat based product.
