Does anyone else remember those delightfully chocolate-covered rice cakes? These no-bake chocolate amaranth bars are a bit like them but with a twist—they’re healthy, gluten-free, and made with whole grains. They’re crunchy, chocolatey and delightful, plus they only require with only 5 ingredients and 10 minutes of prep time. They’re simply perfect!
Inspired by my Chocolate Rice Krispies Treats, this version is indulgent enough to satisfy your sweet cravings after a meal but still balanced for a healthier snack. I’m absolutely delighted with how it turned out! Let’s get started on making these bars!
What is Amaranth?
Amaranth are tiny seeds from an ancient plant that were first grown in the Americas long time ago by the Aztecs. You can cook them just like rice or mix them into other foods, and they taste a bit nutty.
They’re full of good stuff for your body, packed with complete protein, fiber, vitamins, and minerals. They support muscle growth, aid digestion, and are rich in antioxidants.
How to Make Chocolate Amaranth Bars
Making these amaranth bars is like making a fun snack with already-popped amaranth puffs, kind of like using crunchy popcorn. You don’t need to cook them; they’re ready to go! Just mix them into your bars, and you’ll have a tasty treat in no time.
While popping it yourself can be more affordable, you don’t need to worry about that because we’re using store-bought puffed amaranth for this recipe. It makes things easier and just as delicious!
Next, we make the chocolate part. I mixed melted dark chocolate, peanut butter, coconut oil, a little bit of salt to make a yummy, chocolatey sauce. This sauce will help stick the amaranth together.
Mix everything together.
Next, press the mix into a pan lined with paper and put it in the fridge.
After about an hour, it will be ready to cut into bars and eat!

Dark Chocolate Amaranth Bars
Equipment

Ingredients
- 3 cups Amaranth Puffs (90 g)
- 1 cup melted dark chocolate chips (175 g)
- 2 tablespoons coconut oil (30 ml)
- 1/4 cup honey (160 g)
- 1/4 cup peanut butter (240 g)
Instructions
Melting the Chocolate:
- In a microwave-safe bowl, add dark chocolate chips and coconut oil.
- Microwave in 30-second intervals, stirring in between, until the chocolate is fully melted and the mixture is smooth.
Prepare mix:
- In a large bowl, add Amaranth puffs, honey, melted dark chocolate and peanut butter. Mix well until everything is evenly coated.
- Line an 8×8-inch baking dish with parchment paper, leaving some overhang on the sides for easy removal.
- Pour the mixture into the prepared dish and spread it out evenly, pressing it down firmly with a spatula or your hands.
- Refrigerate for at least 1 hour, or until the mixture is firm and set.
- Once set, lift the mixture out of the dish using the parchment paper overhang. Cut into bars or squares using a sharp knife and enjoy!
