    For me, weekends are all about baking. I enjoy cooking during the week, but on weekends, I get extra time to make fun messes in the kitchen and don’t have to worry about cleaning up quickly!

    Plus, the best part about baking is that it usually means someone gets a yummy dessert! Who doesn’t love dessert? Cookies are a great treat because you can make extra dough and keep it in the freezer, ready to bake whenever you want! I’ve got about three different kinds of cookie dough in my freezer right now, just waiting to be baked and enjoyed!

    I finally decided to make these Chocolate Chip Cornflake Cookies that I’ve been thinking about for weeks!

    These cookies are unlike the usual soft and fluffy chocolate chip ones I go for. They’re thin, chewy, and have a crispy, sweet kick from the frosted flakes. It might sound odd, but trust me, they’re incredible!

    Ingredients
      

    • 2 cups almond flour 192 g
    • 1/4 teaspoon baking soda 1 g
    • 1/2 teaspoon salt 3 g
    • 1/4 cup + 1 tablespoon maple syrup 90 g
    • 1/4 cup extra virgin olive oil 60 g
    • 1 teaspoon pure vanilla extract 5 g
    • 1/3 cup dark chocolate chips 85 g
    • pinch of salt
    • 1/2 cup cornflakes cereal 20 g
    Prevent your screen from going dark

    Instructions
     

    • Set your oven to 350°F (175°C). Line a baking sheet with parchment paper.
    • In a big bowl, mix together almond flour, baking soda, salt, maple syrup, coconut oil and vanilla extract.
    • Gently fold in the chocolate chips and cornflakes. Let the dough sit for 5 minutes.
    • Scoop the dough onto the prepared baking sheet, leaving space between each cookie. Slightly press down the tops with a spoon or your hand.
    • Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown. Let cool and enjoy!

    Storage:
    Store any leftovers in an airtight container at room temperature for up to 5 days. For longer storage, keep it in the fridge for up to a week.
