Chocolate chips bak… What?… MMM… YES! Tell me something, do you like surprises? I guess everyone loves them! Well, be ready because I brought you this delicious Double Chocolate Chip Baked Oatmeal with a CHOCOLATE surprise as filling. Oh, whoops! (Just revealed the surprise).
This recipe is healthy, suitable for my vegan friends and extremely delicious!!
I feel that CHOCOLATE is so underrated for breakfast! Because, who said it cannot be enjoyed? Of course, with the right nutrients and ingredients to enhance the deliciousness.
And THIS baked oats are literally DESSERT for BREAKFAST.
The ingredients to make Double Chocolate Chip Baked Oatmeal
We have a lot of your favorite ingredients and here’s what you’ll need:
- Oat flour – which is blended rolled oats
- Granulated sweetener of choice – I use erythritol, which is a sugar substitute
- Vanilla protein powder – I highly recommend adding it, because enhances the flavor and gives a moist texture.
- Baking powder
- Vanilla extract
- Banana – make sure it’s a perfectly ripe banana!
- Milk of choice – I used unsweetened almond milk but you can use any other kind of plant-based or dairy milk
- Chocolate spread – This is the filling, you can use a nutella alternative or any 70% chocolate square
- Chocolate – The chocolate chips I use are sugar-free and the chocolate filling could be hazelnut butter or any 70% chocolate bar
Steps for assembling this Chocolate Chip Baked Oatmeal
- Start pouring the oatmeal batter into an oven-safe container or ramekin, leaving 1/8 of it.
- Add chocolate hazelnut butter or any chocolate as shown in the picture.
- Cover with remaining batter.
- Top with chocolate chips. The more, the better (Trust me).
How big is this recipe?
I used an 8 oz ramekin. So this baked oats are single serve. Just for YOU.
Storing and reheating tips
- To store: I f you prepare multiple batches of this baked oatmeal, store it in the fridge covered, for up to 4 days. You will need to thin it out with extra milk before reheating.
- To reheat: Microwave for 50 seconds. Make sure to add extra milk to moisten it, as the oats will have thickened up.
Ingredients substitutes and notes
- Don’t like bananas? No problem! Add 1 tbsp of chia seeds instead.
- No protein powder? Replace with coconut flour.
- No oat flour? Use rolled oats and add all the ingredients into a blender.
Simple Double Chocolate Chip Baked Oatmeal (for one)

- 8 oz ramekin
Ingredients
Dry ingredients
- 1/2 cup oat flour
- 2 tbsp vanilla protein powder
- 1/2 tsp baking powder
- 1 tbsp granulated sugar of choice (I used erythritol, substitute for coconut sugar)
Wet ingredients
- 1/3 cup milk of choice (I used unsweetened almond milk)
- 2 tbsp mashed banana (1/3 banana)
- 1/2 tsp vanilla extract
Toppings
- sugar free chocolate chips
- chocolate spread (for filling) or any dark chocolate square
Instructions
- Preheat oven to 400F (200C)
- Grab a bowl and start to add all the dry ingredients. After that, mix everything up. Therefore, add the wet ingredients in the same bowl and mix well.
- Pour batter into an 8oz ramekin or oven-proof container. Save (1/8) of the batter. Add chocolate spread or dark chocolate square. Cover with remaining batter. Add chocolate chips on top.
- Bake for 25 minutes. Let cool and enjoy!
