- Peaches – Summer is the perfect season to get fresh peaches, grab the sweetest ones at your local market or grocery store.
- Liquid sweetener – In my case, I used honey but feel free to use any liquid sweetener of choice like, maple or agave syrup.
- Oat flour – Many of you have asked where can you get it or maybe how can you make it? Well, oat flour is essentially consists on blending quick oats into a fine consistency but I personally get it directly from the grocery store in order to optimize the time. If you are Gluten-free, make sure to get a certified brand.
- Lemon juice – The juice from fresh lemons are definitely the best because they don’t contain preservatives. But, in case you don’t find them… No worries! Just as I did, was to get the bottled lemon juice at the grocery store.
- Vanilla extract – Perfect to enhace the flavor of this easy peach crisp.
- Almond flour – Aside from the oat flour, the peach crisp topping needs another one that gives a powdery consistency. Make sure to not use almond meal because is not the same.
- Rolled oats – My favorite kind of oats to use are whole rolled oats because they give more consistency. But feel free to replace with quick oats.
- Salt – A hint of salt is always important on desserts!
- Cinnamon – Don’t forget to add this spice because is a must on peach desserts.
- Coconut oil – Refined or unrefined coconut oil? Well, the answer is that you can use any of both! The difference from these two is that refined coconut oil has a neutral taste and scent almost tasteless. While, the unrefined one has a stonger coconut flavor and scent.

Prepare oven – Pre-heat oven at 180C (350F).
Make the peach filling – Start by peeling and cutting the peaches into small cubes. Then, in a ramekin or oven safe container combine the peaches, liquid sweetener, oat flour, lemon juice and vanilla extract.
Prepare the crisp – In a separate bowl, mix together oat flour, almond flour, rolled oats, salt and cinnamon. Stir in liquid sweetener, coconut oil and vanilla extract until well combined.
Assemble – Spread crisp topping on top of peach filling until mostly covered.
To the oven – Bake for 15 minutes or until topping is golden brown. Let cool and a scoop of vanilla ice cream on top and enjoy!
