This is definitely the fastest dessert you could make just for you! a SINGLE-SERVING COOKIE! isn’t it, goals? Plus, it’s healthy, high in fiber and protein. So, one cookie is enough!
I literally tested this recipe 3 times! It was so hard to get the perfect “soft cookie” in the microwave. But, I finally nailed it!
I gave my mom a little bit to try and she was also amazed. She said it tastes like cake a.k.a. super soft!

What you need to make a perfect treat for the Holidays
- Oat flour – which is blended rolled, old fashioned, quick oats. Feel free to use any kind of oats.
- Baking powder
- Cacao powder – I used Hershey’s 100% unsweetened cacao powder
- Almond butter – I added all-natural drippy almond butter!
- Banana – Make sure to add a ripe banana.
- Milk – Feel free to use any of choice! In my case, was unsweetened almond milk.
- Chocolate chips – Sugar-free, dark chocolate chips, any of choice!
- Vegan Marshmallows
How do you make a healthier cookie?
The Instructions
- Prepare – Gather and measure all the ingredients by starting to mix the oat flour, unsweetened cacao powder and baking powder. Add-in almond butter, mashed banana and milk of choice.
- Knead – Add chocolate chips, vegan marshmallows and knead the dough with your hands.
- Microwave – Microwave for 1 minute. Check if the cookie have risen a bit and looks drier in the outside. If so, let cool and enjoy immediately.
Tips to make the BEST Microwave Cookie
Microwave recipes are a bit hard because everyone has a different type of microwave and WATTS, so the result could not be the same. But here are some tips to make the cookie the most similar possible.
- Dough: While kneading the dough, it should not be sticky. If that happens, add more oat flour.
- Microwave: First, try with 1 minute straight. Check, if the cookie have risen a bit and looks drier in the outside. The cookie must be hot, so it will still cook inside. Let it cool completely

- 1/2 (50 g) mashed banana
