Gather and measure all the ingredients, start off by mixing the rolled oats, vanilla protein powder in a bowl or jar. Consequently add-in milk, yogurt, lemon juice, maple syrup and stir until well combined. Let sit for 5 minutes.
Add Greek or vanilla yogurt, lemon zest and Maria cookies on top.
Cover with a lid or plastic wrap and leave in the refrigerator overnight.
Notes
For the vanilla protein powder, you can try the one I use and get a discount by using my code: "Oatslady". Feel free to omit it, even though, is highly recommended. Replace with an additional 1/2 tablespoon liquid sweetener of choice (maple syrup, agave syrup, date syrup or honey).
Feel free to use any milk of choice, plant-based or dairy.
Replace Maria cookies with Biscoff biscuits.
For the lemon zest, use a cheese grater. Run the side of a lemon back and forth over the grater being careful not to get the pith. Just use the yellow part.
Refrigerating overnight will make oats to soak and they will be ready the next day or if you can't wait let it sit for 4 hours.
