These Strawberry Shortcake Overnight Oats taste like dessert! Incredibly easy and quick to make. Plus it’s healthy, delicious, and vegan! Overnight oats are perfect for hectic mornings. They are a lifesaver! This recipe has only 7 ingredients and I bet you have all of them already in your pantry!
What are overnight oats?
I could call them a “time saver meal” because you literally add all the ingredients into a container or mason jar, refrigerate overnight and breakfast is ready the next morning. They are generally served chilled but if you prefer to eat it warm, microwave for 45-60 seconds.
So, if you have strawberries in the fridge… This is a sign to make this recipe!
I discovered Overnight Oats when I was in my Sophomore year at Uni! My classes used to start at 7:00 A.M. so I needed to make a “Grab & Go” breakfast. I needed something filling so I wouldn’t get hungry in a few hours, especially when I had a test or exam!
Microwave oatmeal was my fastest breakfast but it was still taking me time. So I decided to make it overnight! Since then, it has been my all time go-to breakfast.
Ingredients to make Strawberry Shortcake Overnight Oats
- Rolled oats – You can use any type of oats like, quick oats, old fashioned. If gluten-free, make sure to choose a certified brand of oats.
- Vanilla Protein Powder – Optional but highly recommended! It will give the vanilla flavor in this Overnight Oats and a protein BOOST. I used Protein World protein powder! (use my code: OATSLADY for 30%OFF)
- Flaxseed – Great for thickening the oats, specially if made overnight! They are high in Omega-3, fiber and you won’t taste anything of it.
- Milk of choice – Feel free to add the one of your preference. I use unsweetened almond milk, which has many healthy benefits, doesn’t raise blood sugar, it’s high in vitamin D and may strengthen your bones.
- Almond Butter – Completely optional, it gives a thicker consistency.
- Granulated sugar of choice – I used erythritol, which is a sugar substitute. But feel free to use honey and if you vegan, replace for maple or date syrup instead.
- Maria biscuits – You would say that are not healthy to eat for breakfast. But one biscuit won’t kill anybody. So, feel free to add 1-2 crushed biscuits. They are KEY for a perfect Strawberry Shortcake Overnight Oats.
- Strawberries – Make sure to pick some fresh strawberries for an amazing sweet balance, crunch and freshness.

How to make Strawberry Shortcake Overnight Oats?
The instructions
- Prepare – Gather and measure all the ingredients, start off by mixing the rolled oats, vanilla protein powder, sweetener of choice and flaxseed in a bowl or jar and mix well. Consequently add-in, water, milk and stir until well combined.
- Microwave – Microwave for 1 minute and stir. Then, repeat the process for another minute. Therefore, you will notice that the oats would have thicken up a little bit. Add 1 tbsp of greek yogurt and mix! You will get a creamy consistency.
- Add – Add Maria biscuits and strawberries on top of the oatmeal batter.
- Refrigerate – Cover with a lid or plastic wrap, say good night to your oats and refrigerate overnight.
Can make multiple overnight oats recipes?
YES! Overnight oats can be prepared up to 2-3 days in advance for the week. I used to do it whenever I had early morning UNI classes! I only had to grab breakfast straight from the fridge and I was ready to go.
Can I eat overnight oats hot?
YES! Especially for those cold mornings or you simply don’t feel to eat a cold breakfast. There are two ways:
- Microwave: Grab the overnight oats from the fridge, microwave for 45-60 seconds (make sure there’s enough space at the top of your jar to prevent overflowing).
- Stove-top: Transfer to a saucepan and heat over medium heat until warmed through.
How does this overnight oats taste like?
The oatmeal base is creamy! Reason? Adding 1 tablespoon of greek yogurt or any plain yogurt, creates this beautiful consistency. The Maria biscuits give the perfect crunch and the strawberries the sweetness and acidity needed on this oats.
Notes and substitutions
No protein powder? Replace with oat flour + 1/2 tbsp more of sweetener of choice!
No flaxseed? Use chia seeds instead or simply omit it!

- 1/2 tbsp flaxseed
- 2 tbsp vanilla protein powder (If not using, add 1/2 tbsp sweetener)
- 1 tbsp granulated sugar of choice I used erythritol (replace with maple syrup)
- 2 crushed Maria Biscuits (optional, but recommended)
Wet ingredients
- 1/3 cup milk I used almond milk
- 1/3 cup water
- 1 tbsp almond butter (optional)

Instructions
- Prepare – Gather and measure all the ingredients, start off by mixing the rolled oats, vanilla protein powder, sweetener of choice, crushed Maria Biscuits (optional) and flaxseed in a bowl or jar and mix well. Consequently add-in, water, milk, almond butter and stir until well combined.
- Microwave – Microwave for 1 minute and stir. Then, repeat the process for another minute. Therefore, you will notice that the oats would have thicken up a little bit, a consequently add a splash of milk.
- Add – Add crushed Maria biscuits and strawberries on top of the oatmeal batter. Enjoy immediately!
- (Optional step) Refrigerate – Cover with a lid or plastic wrap, say good night to your oats and refrigerate overnight. Enjoy straight from the fridge next morning!
