Equipment
- Oven
Ingredients
DOUGH:
Dry ingredients
- 2 cups whole wheat flour 240 g
- 1 cup oat flour 100 g
- 1/2 teaspoon salt
Wet ingredients
- 1 cup milk 240 ml
- 2 teaspoon packet instant dry yeast 7 g
- 1 tablespoon maple syrup
- 1 tablespoon unsweetened applesauce
- 1 egg
FILLING:
- 3/4 cup dates 100 g
- 1/2 cup hot water 120 ml
- 1 tablespoon ground cinnamon
GLAZE:
- 1/2 cup powdered sugar 40 g
- 1 1/2 teaspoon milk
Instructions
- Begin by combining whole wheat flour, oat flour, and salt in a bowl, setting the mixture aside.
- Warm the milk in the microwave for 25-30 seconds until it reaches a gentle warmth.
- In the lukewarm milk, blend dry yeast, then incorporate it into the flour mixture. Stir well, adding the sweetener, applesauce, and whisked egg.
- Knead the dough, either using a stand mixer or your hands, but be cautious not to overwork it; about 5 minutes of kneading is sufficient.
- Transfer the kneaded dough into a bowl, cover it, and allow it to rise for an hour at room temperature.
- Prepare the filling. Soak dates in hot water for 30 minutes. Take the dates out from the water and blend them with cinnamon into a smooth paste.
- Once the dough has doubled in size, turn it out onto a floured or greased surface, rolling it into a large rectangle. Evenly spread the delectable date-cinnamon filling over the dough, then roll it up.
- Slice the rolled dough into equal pieces using a sharp knife or dental floss.
- Arrange the individual rolls in a greased baking pan, letting them proof for another 45 minutes.
- In the meantime, prepare the glaze by mixing the powdered sugar and milk.
- Brush the rolls with milk before baking at 350F (180C) for 20-25 minutes or until a delightful golden brown appears.
- While still warm, generously drizzle the glaze on top of the cinnamon rolls. Enjoy!
