What are overnight oats?
I could call them a “time saver super-food” because you just need to add all the ingredients into a container or mason jar, refrigerate overnight (so the oats can soak with the liquid) and breakfast is ready next morning. They are generally served chilled but if you prefer to eat it warm, microwave for 45-60 seconds.
I discovered Overnight Oats when I was in my Sophomore year of Uni while studying Civil Engineering! My classes used to start at 7:00 A.M. so I needed to make a “Grab & Go” breakfast. I needed something filling so I wouldn’t get hungry in a few hours, especially when I had a test or exam!
Microwave oatmeal was my fastest breakfast but it was still taking me time. So I decided to make it overnight! Since then, it has been my all time go-to breakfast.
What you need to make this Easy Key Lime Pie Overnight Oats
- Oats – I used rolled oats. They have a chewier texture and soak well overnight without having a mushy consistency. But, feel free to use any type of oats like, quick oats, just add less milk.
- Vanilla Protein Powder – Optional, but highly recommended for a protein BOOST.
- Milk – I used unsweetened almond milk but you can use any other kind of plant-based or dairy milk.
- Maple syrup – You can use any liquid sweetener of choice, like: date syrup or agave syrup. If not vegan, use honey.
- Lemon juice
- Yogurt – plain or Greek yogurt are the most recommended. The yogurt will give a creamy consistency to the oats.
- Maria cookies
That’s it! So minimal, simple and delicious!

The Instructions
- Prepare – Gather and measure all the ingredients, start off by mixing the rolled oats, vanilla protein powder in a bowl or jar. Consequently add-in milk, yogurt, lemon juice, maple syrup and stir until well combined. Let sit for 5 minutes.
- Topping – Add Greek or vanilla yogurt, lemon zest and Maria cookies on top.
- Refrigerate – Cover with a lid or plastic wrap and leave in the refrigerator overnight.
- Devour – In the morning, enjoy immediately!

Honestly the best breakfast ever! So, no excuses to make this amazing overnight oats. TBH, It’s too easy and quick to make.
Can you heat up oatmeal the next day?
YES! Especially for those cold mornings or you simply don’t feel to eat a cold breakfast. There are two ways:
- Microwave: Grab the overnight oats from the fridge, microwave for 45-60 seconds (make sure there’s enough space at the top of your jar to prevent overflowing).
- Stove-top: Transfer to a saucepan and heat over medium heat until warmed through.
Notes and substitutions
- For the vanilla protein powder feel free to omit it, even though, is highly recommended. Replace with an additional 1/2 tablespoon liquid sweetener of choice (maple syrup, agave syrup, date syrup or honey).
- Feel free to use any milk of choice, plant-based or dairy.
- Replace Maria cookies with Biscoff biscuits.
- For the lemon zest, use a cheese grater. Run the side of a lemon back and forth over the grater being careful not to get the pith. Just use the yellow part.
- Refrigerating overnight will make oats to soak and they will be ready the next day or if you can’t wait let it sit for 4 hours.
